Steamed Pomfret with Garlic and Soy Sauce

Serves : 2 to 4

Ingredients

  • 2 stalks spring onion
  • Half sliced ginger
  • 1½ tbsp light soy sauce
  • ½ tsp sugar
  • 2 tbsp hot water
  • 250g white pomfret
  • 4 tbsp vegetable oil
  • Half chillies, sliced
  • 8 – 10 cloves garlic, minced 

Preparation

  • Cut the spring onions into 2-inches long and julienne a handful for garnish. Place julienned spring onions in a bowl of cut water.
  • Thinly slide ginger. 
  • Pour light soy sauce, sugar and hot water in a small bowl. Mix until sugar is dissolved.
  • Place the cut spring onions and ginger at the base of the Le Creuset Buffet Casserole. Pour 60ml water in. 
  • Score fish. Carefully lay it onto the bed of spring onions and ginger. 
  • Cover and steam for 7 to 10 minutes until the fish is cooked. Duration varies based on the size and thickness of the fish. 
  • Heat up a skillet and shallow fry garlic until golden brown. Remove garlic and set aside.
  • Pour soy sauce mixture over the fish. Top with julienned spring onions and cut chillies.
  • Pour hot garlic oil onto garnish and top with a generous number of fried garlic.
  • Serve well.
