Prosperity Pot

Preparation time : Under 30 mins.

Cooking Time : Under 90 mins.

Serves : 8 to 10

Ingredients

  • 8 – 12 large tiger prawns
  • 8 – 12 large fresh scallops
  • ¼ roast duck
  • 1 steamed chicken drumstick
  • 1 can abalone
  • 1 carrot
  • 1 small head broccoli, chopped to florets
  • 1 small head cauliflower, chopped to florets
  • 10 – 15 dried oysters, pre-soaked for a night
  • 10 shiitake mushrooms, pre-soaked for a night
  • 1 daikon, cut to 1cm thick slices
  • 1 round cabbage
  • 1 Chinese cabbage
  • 1L chicken stock

Preparation

  • Clean and cut Chinese cabbage, round cabbage, broccoli, cauliflower and daikon.
  • Drizzle some oil in a pan, sear scallop until golden. Remove and set aside.
  • Pan fry prawns until cooked. Remove and set aside.
  • Stir fry pre-soaked oysters and mushroom for 3 minutes, add in pre-soaked water and let it braise on low heat for 30 to 45 minutes.
  • Blanch broccoli, cauliflower, carrot in a boiling pot for 3 minutes. Remove and set aside. 
  • Heat up abalone from can. Remove abalone, retain gravy and mix with chicken stock over low heat.  
  • Fill the Le Creuset Marmite pot with Chinese Cabbage, daikon, round cabbage in sequence. Pour in chicken stock, cover with lid and cook for 10 minutes until vegetables are half cooked. 
  • Carefully arrange all the remaining ingredients in the pot. 
  • Drizzle leftover sauce from dried oysters and mushrooms on top of the ingredients. 
  • Serve well.
