Chinese Pear Snow Fungus Dessert

Cooking Time : Under 60 mins.

Serves : 2 to 4

Ingredients

  • 3 Sydney pears
  • 30g snow lotus seeds
  • 30g snow swallow
  • 8 pitted red dates
  • 5g wolfberry
  • 10g north and south apricots
  • 50g Rock sugar
  • 4 cups water

Preparation

  • Soaked snow swallows and snow lotus seeds overnight in advance.
  • Peel, core and cut Sydney pears. 
  • Soak red dates, wolfberries and apricots together for 10 minutes.
  • Put pear, red dates, wolfberries, apricots, rock sugar and water in a Le Creuset EOS soup pot and bring to a boil over medium heat. Continue to cook for 20 minutes in low heat.
  • Add snow swallow and snow lotus seeds, bring to boil and simmer for 15 minutes on low heat.
