Chinese Pear Snow Fungus Dessert

Ingredients
- 3 Sydney pears
- 30g snow lotus seeds
- 30g snow swallow
- 8 pitted red dates
- 5g wolfberry
- 10g north and south apricots
- 50g Rock sugar
- 4 cups water
Preparation
- Soaked snow swallows and snow lotus seeds overnight in advance.
- Peel, core and cut Sydney pears.
- Soak red dates, wolfberries and apricots together for 10 minutes.
- Put pear, red dates, wolfberries, apricots, rock sugar and water in a Le Creuset EOS soup pot and bring to a boil over medium heat. Continue to cook for 20 minutes in low heat.
- Add snow swallow and snow lotus seeds, bring to boil and simmer for 15 minutes on low heat.
